I received this great info from one of the trainers from  SQL PASS Organization.  The attached file  PerfMon Setup, gives step by step instructions on setting up the Windows Performance Monitoring to monitor a server.  There are a few bits that are specific to SQL servers, but most of it is general and excellent monitoring info.   Below is some more information to take the monitoring a step further to import the data into SQL and analyse it...
